I really like pesto. Anything pesto. There is something about the combination of basil and garlic that my taste buds go gaga for. Every time. So one day I thought, “What am I going to make for dinner? I wonder how I can incorporate pesto into spaghetti and meatballs?” So I googled meatballs and pesto. I found the above recipe and adapted it to my needs.
1. Gather your supplies! You will need 1lb ground turkey, 5 1/ 2T pesto, 1 1/2 c. flavored breadcrumbs, 1 egg, 4c spaghetti sauce, 12oz. noodles, and whatever else you want for flavoring. I typically use Tastefully Simple Dried Tomato and Garlic Pesto Mix or add a little basil and garlic powder if I don’t have that on hand.
2. Mix your turkey, breadcrumbs, egg, pesto, and herbs together.
3. Pour about 1/4-1/2 spaghetti sauce in a heavy skillet. This helps the meatballs from burning. Form meatballs and place in the skillet. I use my wok (I use it for pretty much everything).
4. Pour remaining sauce over meatballs. Place lid on skillet. Cook on med-low for 20-25min. stirring every 7 minutes or so to keep bottom from burning. Meanwhile cook noodles.
5. Serve over noodles. These meatballs are also good as a meatball sub/sandwich too!
Turkey Pesto Meatballs
Ingredients:
– 1lb ground turkey
– 4c. spaghetti sauce
– 1 1/2 c. Italian breadcrumbs
– 5 1/2 T. prepared pesto
– 1 egg
– 1 T. basil
– 1 t. garlic powder
– 12oz. noodles
1. Mix turkey, breadcrumbs, pesto, egg, basil, and garlic. Form meatballs.
2. Pour 1/2 sauce in heavy skillet. Place meatballs in skillet. Pour remaining sauce over top.
3. Cook on med-low heat with lid on for 20-25 minutes. Stir every 7 minutes or so to keep meatballs from burning.
4. While meatballs are cooking, cook the noodles.
5. Serve meatballs over noodles. Enjoy!
